This week, my first delivery of "local" (southern Arizona can't grow everything!) organic produce arrived. With it came this recipe, which probably is delicious, but which, of course, I made with things on hand instead. Let me know! I am recipe-challenged (I like to call it "creative").
Crustless Chard and Chees Quiche
Preheat oven: 350
Slice 5 small potatoes with skin on, 1/2" thick. Cover w/ water and simmer 5-10 min.
Saute in 1 TBSP olive, about 5 min: 10 oz chopped Swiss chard. Add 3 chopped garlic cloves, cook 1 min more. Season w/ salt & pepper.
Grease 9X9" pan.
Layer potato slices & chard. Sprinkle top w/ 4 oz crumbled goat cheese.
Whisk together 2 eggs, 1 c milk, more salt & pepper. Pour over veggies & cheese.
Bake 45-50 min at 350 (tester comes out clean).
My alterations:
Made lasagna-like layers of tortillas, raw chopped chard, raw sliced mushrooms.
Omitted onion & oil, sprinkled on minced garlic on top.
Swiss cheese for goat (Swiss was on hand...)
Forgot salt and pepper.
Result: still good, though I wish I hadn't forgotten a bit of salt & pepper, and maybe some ground mustard or nutmeg.
